Bhindi or Okra. You either love it or hate it. And my family LOVES it. Even my not-so-huge-fan-of-veggies children. They'll even horse-trade with it. Conversations can sometimes go like this - Me: Jacob, you need to eat some of the zucchini. Jacob: I'll eat ALL the Bhindi Masala you made. Can I NOT eat the zucchini? Pleeeeease?!?! Me: 🤨 PS: The kid realllllly hates zucchini. I may or may not have gone overboard with zucchini dishes when David (my husband) grew a ridiculous number of zucchini plants a few summers ago. 😉 Cooking Bhindi can be tricky. If you don't cook it properly, you can end up with a slimy and unappetizing mess on your hands. The alternative was to cook it in lots of oil to prevent the sliminess, which gave you a greasy mess instead. My genius sister Rose, who is an awesome cook herself, came up with this idea of oven-roasting Bhindi at a high temperature which needs much lesser oil than the stove-top method, Thank you Rose! Special EquipmentI use a large carbon steel pan, like the one on the left in the pic below. My sister uses an aluminum half-sheet pan like the one on the right in the pic below. If you have neither, then you can also use a glass Pyrex dish. If you plan to use a glass Pyrex, do NOT preheat the glass dish while the oven is preheating. Check the Tips & Tricks section for the reason. baking temperature and timeBaking Temperature: 450F or 230C, with the Convection fan turned on (if your oven has that feature). Baking Time: 20 to 30 mins.
